Tommaso Foglia, born in 1990, was born in Nola (Naples). He took his first steps in his family’s bakery, where he developed a passion for leavened products. Just over a teenager, in 2007, he moved to Sant’Agata sui Due Golfi to join the two-Michelin-starred kitchen of the renowned Don Alfonso 1890, which guided his professional growth through pastry experiences at Ristorante Baby in Rome and Le Sirenuse in Positano. In 2011, he returned to Maison Iaccarino as Pastry Chef. He also gained significant international experience at La Mamounia Palace Hotel in Marrakech, in the United Arab Emirates for the opening of Don Alfonso Dubai, at Whatley Manor in Wiltshire, and at the two-Michelin-starred Patrick Guilbaud restaurant in Ireland. In 2017, he moved to Bologna to join the Michelin-starred restaurant I Portici. In 2018, he embraced the Lucanian project of San Barbato Resort in Lavello (Don Alfonso consultancy), taking on the role of Executive Pastry Chef. Since 2022, he has been working as a pastry consultant and instructor, collaborating with various businesses both in Italy and abroad. In May 2022, he also joined the Real Time family with the television programs *Bake Off* and *Cake Star*.
