Francesco Elmi is an established pastry chef from Bologna who has turned his passion into a solid profession. His journey began in 1988 at Calderoni, a renowned pastry shop in Bologna, and continued from 1994 with a strong collaboration with Fabbri 1905, a historic confectionery company from Bologna, for consulting and professional development activities.
Throughout his career, he has combined his work in the laboratory with significant teaching and educational activities. He has been an instructor at prestigious schools such as Carpigiani University and head of tastings at Cioccoshow, bringing his expertise beyond Italian borders through consulting and masterclasses in international contexts such as Visionnaire in Monte Carlo, Minnesota, and Fully Baked Story in Bangkok.
On television, he distinguished himself by winning the 2018 edition of Cake Star and has been a guest on programs such as MasterChef Italia, helping to introduce his approach to pastry to a wider audience. In 2010, he opened Regina di Quadri in Bologna, the pastry shop of his dreams, renovated after just two years to become a reference point for Italian pastry in the city.
Since 2020, he has been a member of the Academy of Masters of Sourdough and Italian Panettone and is president of the Panettone World Championship, the first team-based world panettone championship. He is also a founding member of APEI – Ambassadors of Italian Pastry Excellence, led by Iginio Massari, with the goal of promoting Made in Italy confectionery art worldwide.
