Yuri Cestari is a pastry and chocolate consultant from the province of Modena, with a career built on technical training, research, and professional dissemination. His interest in the world of chocolate began during his school years thanks to a meeting with master Tiziano Busuoli, an experience that marked the beginning of his growth in the sector.
After an initial experience at the Giamberlano pastry shop in Pavullo nel Frignano, he trained at the Accademia Etoile in Sottomarina di Chioggia, under the guidance of Gabriele Bozio and with instructors such as Stefano Laghi. He then continued his journey at Stefano Laghi’s chocolate shop in Faenza and had a brief but significant experience at Massimo Bottura’s Osteria Francescana.
In 2015, he began collaborating with Barry-Callebaut, first serving as a consultant for Callebaut and then as technical manager for Callebaut Italia. He later worked with the Roboqbo group, became a teacher and trainer at CAST Alimenti, and continues to offer specialist consultancy to pastry and chocolate shops.
In 2018, together with Alexandre Bourdeaux, he developed the Ganache Solution software, dedicated to the creation and management of praline recipes. In 2023, he founded BETAcioc with Filippo Falciola, a chocolate production laboratory with a research and development classroom. Today, he continues to stand out for his ability to combine technical expertise, training, and innovation in the world of pastry and chocolate making.
