A chocolate globetrotter. With an international career that has taken him to work in various countries, David continues to stand out for his ability to combine tradition and innovation in pastry and artisan chocolate.
David Patino is a pastry chef and chocolatier trained in the finest Italian pastry shops and enriching his educational experience at the prestigious Celler de Can Roca (3 Michelin stars), alongside Jordi Roca. In 2024, he completed a master’s degree in “Fellowship en Processos Creatius en Gastronomia” at the Barcelona School of Tourism, Hospitality and Gastronomy, deepening his knowledge of creative processes applied to gastronomy.
Throughout his career, he has worked and completed pastry courses in various countries, including Bali, Panama, Korea, Singapore, China, Germany, Austria, and Belgium, with predominant training in Italy. He has collaborated with the Cast Alimenti School, working alongside maestro Iginio Massari, and has served as a Bean to Bar technician for Selmi. Since 2017, he has held the position of Pastry Chef for Callebaut.
In 2017, he participated in Eurochocolate in Perugia with an activity entitled “Bean to Bar in Italy and the World: Origins, Tradition and Innovation”, receiving the International Chocolate Award.
He is currently the chef at Mason Chocolates in Bali, where he develops innovative products and high-quality chocolate using local ingredients.
